Nihari is beef or lamb shank simmered overnight in a spiced, bone-marrow-rich gravy, served for breakfast with naan, ginger juliennes, lemon and fried onion. Haleem is a thick porridge of wheat, lentils and shredded meat cooked until they fuse; paya is a trotter soup in the same tradition.
