Rasmalai & rasgulla

Bengali sweets made from chhena (fresh cheese curds). Rasgulla are spongy balls poached in light syrup; rasmalai flattens them and soaks them in sweetened, cardamom-and-saffron-scented thickened milk with pistachio. Sandesh is the drier, moulded cousin.
