Kadai / karahi

Named for the wok-like iron pan it is cooked in: meat or paneer stir-fried at high heat with a coarse masala of crushed coriander seed, dried chili, tomato and bell pepper. Drier and punchier than a gravy curry; the Pakistani karahi is cooked with tomatoes, green chili and ginger, often by weight for the table.
